If you’re looking to up your breakfast game, then this Citrus shrimp open sandwich is the one for you! It has everything that is beautiful about summer. The colours, textures, citrus flavours and pretty edible flowers all come together in a delicious and appetising bite!
This post is all about how to make a citrus shrimp open sandwich!
To start with, prep all the individual ingredients beforehand. Not only can you plan your meals better, but it also saves you time in the mornings. Choosing the right bread is important too. I find rye and sour dough breads work better for this recipe, but feel free to use whatever you have at home.
Another tip would be to use organic oranges for this recipe, as we will be adding slices with the rind attached. I am also using the pink hummus I made with red grapes and beetroot. You can find the recipe here.



To start, lay out your piece of bread. Add a good bit of hummus and top it off with Arugula. If you don’t have Arugula, then regular salad will do just fine. Once this is done, add your tomato and cucumber slices, alternating between them.



Next, add the pre boiled shrimp and layer some micro-greens over it. One more tip is to salt the cucumbers and drain out the excess liquid.
Lastly, garnish the sandwich with edible flowers and small slices of orange.

Citrus Shrimp Open Sandwich
Ingredients
- 1 Slice Bread
- 1 tbsp Hummus
- Handful of assorted Salad leaves (I'm using young salad)
- 2-3 Slices Tomato
- 5-6 pcs Pre Boiled Shrimp
- 5-6 Slices Cucumber
- 4 Slices Orange
- Assorted Micro-greens (I'm using Broccoli Sprouts)
- Edible Flowers (For garnishing)
Instructions
- Decide if you want to toast your bread.
- Spread Pesto on your slice of bread.
- Place a handful of Salad leaves on top of the Pesto layer.
- Add your Tomato slices.
- Place the Shrimps on top of the Tomatoes.
- Add the Cucumber slices, on top of the Shrimp.
- Sprinkle the Micro Greens and edible flowers on top.
- Add small bits of Oranges as the topmost layer.
