This summer vegetarian open sandwich is perfect for those days where it’s just too hot to eat heavy dishes. It’s perfect as a snack as well as a health conscious meal. Loaded with nutrition, this is just what you need during those hot, sweltering days of August!

This post is all about how to make a Summer Vegetarian open sandwich!

I’ve used a lot of colour in this sandwich, in keeping with the summer theme. The yellow Hummus was particularly fun and delicious. You can find the recipe here.

The contrast of the yellow hummus and the bright green lamb’s lettuce is particularly striking.

On your preferred bread, spread out a generous amount of hummus. Add a layer of lamb’s lettuce to the hummus. If you don’t have the lamb’s lettuce, don’t worry. Just substitute it for any other salad leaves. To this, add thinly sliced cucumbers. If you wish, you can salt them for an hour and drain out the water before adding them.

Next, add the orange slices, assorted micro-greens and edible flowers. Lastly, garnish the sandwich with your preferred nuts and seeds. I’ve used hemp seeds here. This is an optional step as not everyone is able to eat nuts.

Summer Vegetarian Open Sandwich

Ingredients
  

  • 1 Slice Bread
  • 1 tbsp Pesto
  • Lamb's Lettuce
  • 5-6 Slices Cucumber
  • 3-4 Orange slices
  • Assorted Micro-greens ( for garnishing)
  • Edible Flowers ( for garnishing)
  • 1 tsp Hemp Seeds ( for garnishing)

Instructions
 

  • Toast your bread first, if you want your sandwich crunchy.
  • Spread a layer of Pesto.
  • Add a handful of lamb's lettuce to the pesto.
  • Add Cucumbers and Orange Slices.
  • Sprinkle the Edible flowers and assorted micro-greens.
  • Lastly, sprinkle the Chia seeds.
