This healthy tomato feta open sandwich is sure to be a hit with your vegetarian friends! This is perfect for brunches and packs a lot of nutrition. Tomato and feta are always such a classic and popular combination, you can’t go wrong with this one!

This post is all about how to make a healthy tomato feta open sandwich!

This sandwich is the last in the summer sandwich series, and what better way to celebrate summer than a classic Tomato and Feta cheese sandwich. The perfect mediterranean flavour to indulge in, on those warm and sultry days.

I’ve used rye bread and store bought sun-dried tomato Pesto. You can also add sun dried tomatoes for flavour on the sandwich itself.

On your preferred bread, spread out a generous amount of pesto. Add a layer of lamb’s lettuce to this. I’ve used a combination of lamb’s lettuce and arugula. Then place your sliced tomatoes, followed by feta cheese.

Next, add a drizzle of balsamico for flavour and top it off with assorted micro-greens and edible flowers. I’ve also sprinkled some hemp seeds as garnish, but you can skip this step if you have nut or seed allergy.

Healthy Tomato Feta Open Sandwich

Ingredients
  

  • 1 Slice Bread
  • 1 tbsp Store bought Pesto
  • Handful of Lamb's Lettuce
  • Handful of mixed Salad leaves
  • 2-3 Slices Tomato
  • 2 Slices Feta Cheese
  • 1 Tbsp Balsamico
  • Assorted Micro-greens
  • Edible Flowers

Instructions
 

  • Decide on whether you will be toasting your bread.
  • Spread the Pesto on top of the bread.
  • Add a mix of the Lamb's lettuce and salad leaves on top of the pesto.
  • Place the tomato slices.
  • Add the Feta Cheese slices to this.
  • Drizzle some Balsamic sauce on top of the Feta.
  • Sprinkle the edible flowers and micro greens.
