This summer shrimp open sandwich recipe is super easy to make. It took me less than 10 minutes to put together! The peppery flavour of the Arugula, with the creaminess and sweetness of the tomato and paprika pesto was just amazing!
This post is all about how to make a summer shrimp open sandwich!
As I mentioned in my previous post, I’ve been experimenting with breakfast sandwiches and especially, open sandwiches a lot. I came up with 6 separate recipes that were perfect for me. I couldn’t wait to recreate and share them with you too!
What I love about these sandwiches is that most of them require little to no cooking. It’s mostly assembly. Once you have your ingredients prepped, you’re good to go. Another tip would be to prep them the night before, so that you can have a quick breakfast or snack when needed.
I used Rye bread with store bought Pesto. This is a tomato and paprika pesto but you could substitute it with hummus or any other spread of your choice.



To start, lay out your piece of bread. Add a good bit of Pesto and top it off with Arugula. If you don’t have Arugula, then regular salad will do just fine.
Next, add the pre boiled shrimp and layer some cucumber slices over it. Another tip is to salt the cucumbers and drain out the excess liquid. I also added some micro-greens for crunch.
Lastly, garnish the sandwich with sprigs of Dill.

Delicious Summer Shrimp Open Sandwich
Ingredients
- 1 Slice Any bread of your choice I'm using Whole Wheat
- 1 tbsp Store bought Pesto
- 3-4 Slices Cucumber
- Mixed Salad Leaves I'm using young salad leaves
- Dill herb Just a few springs
- 4 pcs Pre boiled Shrimps
- Microgreens I'm using store bought but you easily sprout your own.
Instructions
- Decide if you want to toast your bread.
- Spread a good layer of Pesto on your bread.
- Add a handful of salad leaves to create a 'bed' for the rest of the toppings.
- Position your Shrimps.
- Add the Cucumber slices on top of the Shrimp.
- Add the Dill.
- Add the Micro greens and you're done!
