I absolutely loved making this delicious poached egg open sandwich. Not only was it colourful and fun to put together, but it’s so nutritious!
This post is all about how to make a Poached egg open sandwich for Summer!
Except for poaching the Egg, there’s no cooking involved. It’s more of an assembly which is great because you get to play with Summer colours and flavours.
To make the process fun and easy, prep all the ingredients before hand. This means washing all the produce, prepping and chopping everything.



To start, lay out your piece of bread. I’m using whole wheat, but you can use whatever you have. Next, spread your Hummus. In this post, I show you how to make three easy Hummus recipes for Summer.
Next, add some leaves for the salad bed. I’m using an assortment of baby spinach, Arugula and lettuce, but you can use whatever you’re comfortable with.



Then gently place your poached Egg right in the middle. Add your cherry tomatoes, sliced radishes and Mozzarella. Drizzle a bit of Balsamico to add a tangy flavour.



Don’t forget to add the sliced Cucumbers. Finally sprinkle some micro-greens for a bit of crunch and flavour. I’m using Broccoli and lettuce. Add Edible flowers of your choice as the final garnish. Make sure you choose the right flowers. The best and safest is to always buy edible flowers from the supermarket.

Delicious Poached Egg Open Sandwich
Ingredients
- 1 Slice Bread
- 1 Poached Egg (there are several YouTube Tutorials online on how to poach an egg)
- 1 tbsp Pesto
- Mixed Salad Leaves ( just a handful)
- 2-3 Cherry Tomatoes
- 3-4 Slices Cucumber
- 3-4 Slices Radish
- 1 Mozzarella
- Micro-greens (for garnishing)
- Edible Flowers (for garnishing)
- Balsamico (for garnishing)
Instructions
- Prepare the Poached Egg and keep it aside.
- Decide if you want to toast your bread.
- Spread Hummus on the bread.
- Add a bed of salad leaves on top of the Pesto.
- Add sliced Cherry Tomatoes onto the leaves.
- Add your Poached egg in the middle of the bread.
- Add pices of Mozzarella to either side of the egg.
- Add in the Cucumber and Radish slices.
- Drizzle Balsamico on top of the Sandwich.
- Add the Micro-greens and Edible Flowers as garnish.
